Fall Festivites and Give Away

Its getting harder to post blogs with a busy 6 month old. He is outgrown morning naps and takes a four hour afternoon nap now. This Mommy is a happy camper, its the only time for laundry and dishes or a warm cup of coffee!!

For Halloween we dressed Lincoln up as a lobster and daddy carried him in a giant stew pot to all of the grandparents houses in town. It was a lot of fun. He had fun and got a lot of diapers, since breastfeed babies don't get candy! We did not go to a corn maze or anything because the baby does not really care. We took family pictures. We had dinners and different families houses and had a great first fall as a family of three.

The crock pot has been a life savor this year with my new title as Mommy. Today I am cooking a white bean chili.

White Chicken Bean Chili

You can use chicken or pork,

I used pork a pork roast.
I put the pork(chopped up in decent chunks so it doesn't take as long to cook) in the crock pot on high for about an hour with 3 cups of water and 2 chicken broth cubes, and a diced medium white onion. Then let it sit there and cook the pork while Lincoln and I played games. Then I added 3 cans of different white beans, (pinto, kidney, garbanzo) one of each cans but you can mix and match. added a 4oz can of green chilies. (you can use jalapenos too but again a breastfeed Mama here). Let it cooked on low for 4 hours ish or until the pork is moist. It will be nice and Hot by the time daddy gets home from working in this snowy weather.

You can add cornbread, rolls, or briskets to this soup. I have not decided which one I am going to do yet.

I am so thankful I get to be a Mommy and stay home with my Son during snowy days. I am a warm weather person who is stuck in the cold tundra of Wyoming.

For Thanksgiving we plan on going to Great Aunt Trish's house for Thanksgiving. So Lincoln can meet the family there he has not yet. But we will see how the weather goes.
Lovely pictures by Jessica Coleman and Poetic imaging.

I am thankful for many things this Snowy November day.
